Kachori is one of the favorite snacks in the streets of India. This one is the simplest version of our regular Aloo Pyaj Kachori !!! Ingredients :

4 Onion
2 Boiled Potato
1 tsp Cumin
1 tbsp Coriander powder
½ tsp Fennel Seed
½ tsp Aamchur Powder
1 tsp Salt
2 tbsp Oil
3 Green Chilli
2 tbsp Chickpea Flour
1 tsp Red Chili powder
3 tbsp Coriander Leaves
2 cup Refined Flour
5 tbsp Purified Butter
1 tsp Salt
½ cup Water
¼ tsp Carom Seeds

Method:

In a bowl add 2 cups of Refined flour, 5 tbsp of Purified butter, 1 tsp Salt, ¼ tsp Carom Seed and ½ cup of Water. Knead a stiff dough out of it. Rest it for 30 minutes.

In a heated pan take 2 tbsp of oil. Add green chili, ginger, Cumin, Kasuri Methi and Fennel seed. Saute it well. Add 2 tbsp of chickpea flour and roast it till starts releasing the aroma. Add onions to and cook it till it becomes soft and translucent. Add all powdered Masala and again cook for 5 minutes. In the end add boiled potato and combine it well.

Remove this stuffing from heat and cool it down completely. Add coriander leaves and shape them into small balls.

Form the same size of balls out of dough. Make a well in the dough and stuff masala balls in it and close it tight. Flatten these kachoris. —
Fry Kachoris on Low flame till it turns fluffy and golden brown in color.

Serve Hot with your favorite Chutney or dips.
