This dish with bright green methi and mutter dotting a delectable smooth white gravy is much more than a treat to the eyes. Ready in less than 30 mins, it makes for a perfect weeknight dinner.
Ingredients:
1 tsp Cumin seeds
8-10 Cashewnuts
½ cup Onions
1 tsp Garlic
1 tsp Ginger
2 tsp Green chillies
2 tbsp Clarified butter
1 Bay leaf
2 Cardamom
1 cup fenugreek leaves
1 cup Boiled Green Peas
1 cup water
½ cup Fresh cream
1.5 tsp salt
1 tbsp sugar
Method:
Grind together cumin seeds, onion, cashewnuts, ginger, garlic and green chillies to a smooth paste.

Take ghee in a pan and add the paste. Saute till it gets cooked and it stops sticking to the pan.

Add methi leaves and saute for a few seconds. Add water and the boiled peas.

Let it boil. Once the gravy thickens, add the salt and sugar. Add the cream in and mix well.

Simmer for a couple of minutes and serve hot with rotis!
